The Best Homemade Bread

One of my favorite aromas growing up was that of fresh bread baking in the oven. My mother used to make homemade bread when I was younger, and now every time I smell fresh bread baking in the oven I am transported back in time to my childhood. This amazing recipe is certain to make your entire house smell like an artisanal bakery. This loaf was made with a gluten free flour blend and has the option to be dairy free as well.

1. Dissolve yeast and sugar in water in a small bowl. Let stand until bubbly(2-3 minutes). 2. While the yeast is reacting, combine flour mix, xanthan gum, dry milk powder, potato flakes, and salt in stand mixer bowl and whisk until well combined. 3. Add yeast mixture, vinegar, egg whites, and oil to flour mixture. 4. Mix on medium speed for 3-5 minutes. It should be the consistency of a thick batter (too

thick to pour; not thick enough to form a ball). Add water or flour 1 T at a time as needed to attain this consistency. 5. Grease bottom and sides of 1 loaf pan.

6. Spread batter in loaf pan. Slightly peak the middle lengthwise instead of pressing it flat. 7. Let rise in warm place until batter is about 1/2" from top edges of bread pan. I heat my oven to 170° and then turn off the oven and place loaf pan inside. It then takes 15-20 minutes for batter to rise; no need to cover it. 8. Take dough out of oven and preheat to 350°. Bread should now peak just above the rim.

9. Bake for 35-40 minutes, until bread looks firm and is fairly brown on top (browner than golden brown, but not burnt). It will fall as it is cooling if you take it out too early. 10. Let cool for 20-30 minutes in pan before removing. 11. Let cool completely on a wire rack before slicing.
