My mom and my husband's dad were both raised on their families' farms. Thanks to them, we both grew up eating fried okra and fried squash every summer. While I still devour them, I make them a little healthier by using way less oil and baking them in the oven. After lightly coating the squash in oil, toss in cornmeal for the same taste as fried squash
Don't fret if some pieces appear burnt. They still taste great (unless they are charred-then throw those out).
