Chicken Salad

Chicken salad is one of my favorite dishes in the summer. Full of protein, fruit, and flavor it's hard to go wrong with this recipe.







Ingredients

• 3 pounds of chicken

• 1/2 cup of mayo (you can always add more if it seems too dry, but you can't take it out once it's added)

• 1 tsp garlic powder

• 1 tsp onion powder

• 2 tsp salt

• 2 tsp pepper

• 2 cups sliced red grapes*

• 2 cups cored, chopped apples* (I use envy apples)

Instructions

1. Fill a large pot with water until the chicken is completely submerged. Boil.

2. Shred the chicken once it is cooked. (My KitchenAid mixer works perfectly.)

3. Mix in mayo and seasonings.

4. Stir in grapes and apples.

5. Chill until cold before serving for the best results.

*You can add as many or as few grapes and apples as you want. It's personal preference.
